onlinechef is an idiot—ignore it. This recipe is fantastic if you follow directions (which are super easy). I’ve shared it with tons of friends and family and it’s become a staple in the households that cook regularly.

Great recipe as is but will be easy to enhance with olives or peppers to taste. My kids loved it and they usually don't like anything but the meat on their taco. I made my own own enchilada sauce and it was still quick to put together. With premade sauce this would be an excellent weeknight recipe - could be put together in 10-15 minutes.

WOW! I usually don't eat enchiladas, but this was awesome. I will definitely be making this again. Next time I might add more toppings. (Example: mushrooms)

Very good. Used some of the suggestions - salsa, corn, green chilies & used chopped cooked turkey breast rather than ground. Also used low carb tortillas. Worked very well.

I love making this on a cool day when we have people over to watch football. I add black beans or nonfat refried beans, canned corn, and sliced black olives and/or chopped green onions to the top, served with lowfat sour cream.

Simple yet delicious. It's only as good as your favorite enchilada sauce though. First I tried a Mexican brand and the casserole was great! My husband raved over it. Then I tried Old El Paso and it wasn't as good.

I give this 5 stars! Although i did make a few adjustments just based on what I had on hand. I added corn and black beans to the onion/turkey mixture and also about a cup of salsa and a cup of canned tomatoes (instead of doing the enchilada sauce - didn't have it) Also I added in a about a 1/4cup of sour cream to the mixture too for a little creamier mixture. I used flour tortillas - and did all the rest the same. I also sprayed the bottom of my baking dish with spray so nothing would stick. Came out great --- my 4 and 2 year old both ate it all up. Cut out of pan really easily and wasn't runny at all. Will make again!

Great recipe! I'll add salsa or jalepenos next time because my husband and I like spicy food. I like scargosun's idea to add corn and zucchini. Will try that next time.

I made the enchilada sauce and refried beans for this recipe- I think they were worth it, but would easily make this a quick mid-week meal. I also added a medium salsa to the layers to spice it up a little.

Made this tonight...even the picky teenager ate it.was really good!!! I cooked it a little longer to make the cheese a little bit crispy on top....so good. Wouldn't change anything else!

OMG! So good! I added some corn that I had in the freezer from the summer and a bell pepper and debated about adding zucchini and black beans as well. I decided to hold off on the beans and zucchini this time but will add next time. You could add just about any veg you have on hand. I used 1 can mild enchilada sauce, and 1 can medium and I think it worked perfectly. I chopped up some avocado and it cuts the spicy without taking away flavor. LOVE THIS!!!

my family loved this recipe!!!! though next time im going to grate the onion so my kids dont complain about onion. I didnt add any salt and i used jennie-o extra lean turkey instad of regular turkey and used 1.25 lbs since that is what the package is sold in that made it 197 calories for a serving and i got 9 servings using a square pan. and i cant cook at all but i did it!!!! and got pictures to prove it ;-)

We love this recipe! I make it exactly as stated and our family of 5 loves it. Some eat it as served. Others top it off with sour cream and salsa. It's wonderful and a great way to use ground turkey.

So easy and so good, I used 1 hot enchilada sauce and two mediums, threw in two extra chipotle peppers with adobe sauce I had left over from another recipe. I can tell it would be good even without those. I strongly recommend this for a quick and tasty dinner.

I thought this recipe was really good. I used hot red enchilada sauce, but next time I might use medium. This was so much easier than regular enchiladas, but just as good! Will definitely make again.

Loved this dish and it was fairly quick to make. Used whole wheat tortillas, and added a can of corn and small can of sliced olives to the meat mixture. Half hot and half mild enchilada sauce gave it a nice kick. Be sure to cover the first 15 minutes; uncover for another 5 minutes or until bubbly hot!

Not much else to add except that I would probably cover with foil for half of the baking time, then remove for the last half; the cheese topping became very hard and crusty despite the enchilada sauce. Otherwise, it's a great meal with good flavor. Definitely use light Mexican blend cheese - no need to go full-fat on this one. I served this with fresh salsa, hot sauce, and a side salad of avocado/grape tomato/romaine with lime-cumin dressing.

This recipe has become a family favorite. It's easy to make, healthy, and satisfies our craving for Mexican food. I use Hatch brand Medium Enchilada Sauce - it adds some bite. I bake the casserole at 400 degrees, covered for 15 minutes then uncovered for last 5 minutes. Try this recipe - it's a winner!

This recipe is simple, inexpensive and tasty. I halved the recipe, since I was only cooking for two, and baked it in an 8x8 dish. It worked great but I cut the cooking time by five minutes.

this was soooo good! i added diced green peppers with the onions and garlic and would consider black or pinto beans next time too. my 7 yr old is notoriously picky and she loved this! I also used the low fat Mexican cheese blend. This will be a regular in our house!

Yum! I'd make again. Great way to get rid of leftover (Thanksgiving) turkey too. I used leftover that we had & it still tasted fine even though it was cooked already. I wasn't sure on how much turkey I had, or how big my casserole dish was, but I just threw it all in there & it tasted great! My hubby loved it and my 3 yr and 18-month old both ate it. I made it w/ the mild enchilada sauce & used reduced fat Mexican blend cheese. Suggestions about the black beans & corn sound good too. Super easy to make.

This dish was fantastic. Very easy to prepare. I used low-fat Mexican cheese blend instead of plain Jack cheese (I added a bit more than 2 cups because I ran out at for the top). I paired the meal with Spanish yellow rice, some fresh salsa and low fat sour cream. My whole family loved it -even my 3 year old. Everyone is already asking when I will make it again!!

Delicious! So easy to make too. I served with black beans and rice. I might add a little spice next time but other than that was great as written. My picky eater husband who previously turned his nose up at ground turkey thought this dish was fabulous. A great way to have the Mexican food we love without all the fat and calories! Will make again and again!

This is a good weeknight recipe, though probably not a repeat for me. I added some diced green chiles, used mild enchilada sauce and added a pinch of chipotle chili powder. It was good, but lacking something I couldn't quite place...perhaps cornmeal.

This was a really good recipe, and so quick and easy to make. Being from the Southern US, I really love spicy food so I added some chopped jalapenos and some habanero sauce to the mix, and it turned out great! I also used low fat Weight Watchers cheddar cheese instead of Monterrey Jack (only because my supermarket didn't have it) and had to also substitute chile con carne cooking sauce for enchilada sauce but in the end, it turned out fine! I would recommend this dish!

Such an easy recipe, and so tasty. I will omit the salt next time--the enchilada sauce was salty enough. Also next time I think I'll add black beans and corn. But this recipe is wonderful just as it is. Great for potlucks, and also great for kids and adults alike. Five stars.

Great the way I made it!! I don't know about the base recipe itself, but my family loved it with the changes I added. I sauteed the onions for a bit first then added one small can of hot green chilies and extra garlic and sauteed all of that before adding salted and peppered turkey (only 1.2 lbs). Added the cumin and oregano as well as chili powder and paprika and then one can each of no salt added corn and black beans plus a little chopped cilantro and stirred together. Added the cup of enchilada sauce and let it all cook together a minute before continuing with the casserole layering part of the recipe. Served with some homemade guacamole and diced tomatoes no side. Came out delicious but spicy DO NOT MAKE IT WITH HOT GREEN CHILIES IF YOU DON'T LIKE SPICY!! Definitely will make this again.

This recipe was super easy, cheap, and delicious! My husband, who is a big fan of red meat, couldn't tell that I used ground turkey instead of ground beef! I followed the recipe exactly and I wouldn't change a thing! GREAT RECIPE, I am definitely going to make this again! We can't wait to enjoy the leftovers for the rest of the week!

Really easy recipe! And so delicious. I was kind of worried because sometimes turkey can be bland and dry, but that was not the case here. Didn't miss the beef at all. Served with black beans and salad. I highly recommend this dish.
